Slow Ride...Take it Easy......
I don't care what month it is...
If it's Sunny, dry, and 60, I'm Ridin-N-Grillin!!
Ole Barney purrs like a kitten in this cool weather.
I marinated some boneless/skinless chicken breasts in
a Jamaican Jerk sauce overnight. I also made some Pesto
from Almonds (instead of pine-nuts), Basil, Garlic, and
slices of fresh Parmesian, with Olive Oil, dumped over
some Rotini pasta. In the Acorn squash halves, I made
2 halves savory (Butter basil a garlic clove Sea Salt),
and I made 2 halves with Butter, Maple Syrup, Cinnemon,
and fresh grated Nutmeg. The bottom pic is the finished
product. Often times over the jerk chicken seedless
Blackberry preserves are slathered.
It was YUMMY!!
The Ride was Grand.
